Tips for ingredient list:
Instead of using fresh tomatoes, I use a can of diced tomatoes.
If you don't have arugula at your grocery store, fresh spinach is an excellent substitute.
You can use a variety of short pastas, but the orecchiette will be the heartiest.
I usually prep all the ingredients and complete steps 1-3 up to three days ahead. Just before dinner I complete steps 4-5.

I made this yesterday with the spinach. It was really good! I subbed "ruffles" pasta since that is what the commissary had...and I used the whole box (16 oz). It was too much pasta. Also, on the recipe it doesn't mention when to throw in those fresh tomatoes. I did it at the end before serving. However, my tomatoes had been in the fridge and therefore gave the whole pot a little chill. Next time I might nuke fresh maters about 30 seconds before tossing them in.

ReplyDeleteMy parents have been visiting and I made this recipe for lunch today since I had all the ingredients in my pantry/fridge. They loved the flavour that the slow cooked onions gave the whole dish, and when dinner came around, they asked to have it again! (Dinner is being reheated as I type!!) Thanks!
